In Vedic times, a complete meal had to contain all the six tastes: pungent, acid, sweet, salty, bitter and alkaline. It also contained five types of food bhakshya (crunchy/chewy), bhojya (semi-solids), choshya (suckable, like mangoes), lehya (lickable, like honey) and peya (drinkable).
Ancient Indians divided all food into three categories based on their effect on the taste buds, the body and the mind. Saatvik foods include whole grains, honey, sprouts, nuts, pulses, milk, fresh fruits and vegetables. They are nutritious, simple and juicy, and make the brain calm and clear. Rajasik foods include very hot, sour, dry, salty and spicy foods, eggs, fish, meat, etc. They heat the body, stimulate the senses and make the mind restless. Tamasik foods include red meat, alcohol, onions, garlic, overripe fruits and fermented foods.
